For some reason pulled pork sandwiches always make me think of Spring. I’m not really sure why, but they do. Maybe it’s the idea of picnics. Regardless, I’ve always enjoyed eating them but never made them until recently.
I settled on the recipe from Iowa Girl Eats. All the recipes looked great, but her recipe looked great and was SIMPLE. I firmly believe anything cooked in a slow cooker should only use a few ingredients and be a snap to put together.
Sure. You can call me lazy. Or maybe I’m just a brilliant time management guru.
Now that you’ve picked yourself off the floor from laughing so hard, I’ll remind you that thanks to me (okay, Kristin) you have a simple and delicious pulled pork recipe to try.
Ingredients
- 3 lbs. Pork Shoulder
- Coke Zero (or your favorite cola)
- Your favorite BBQ sauce
- Garlic Salt
- Onion, sliced
Instructions
- Cut pork shoulder into large chunks and place in a 4 or 6 quart slow cooker.
- Season generously with garlic salt and stir. Cover with Coke Zero or your favorite cola. Top with 1/2 cup BBQ sauce and sliced onions.
- Cook on low for 8 hours. Remove pork and place on cutting board. Carefully use two forks to shred pork.
- Skim off the fat from the cooking liquid and add shredded beef back into the sauce.
- Serve with extra BBQ sauce and your favorite toppings – coleslaw, pickles, caramelized onion, etc.
Enjoy!
