Yup. I know. It sounds weird. I’ve seen this recipe floating around for ages and never got around to trying it until now. It sounds intriguing. I like balsamic vinegar. I like strawberries. But I wasn’t 100% convinced that I’d like them together. So I tucked the recipe away and ate mashed potatoes instead.
Yes, mashed potatoes are my answer and cure-all to any ailment, celebration or just because.
After a heavier (and by heavy I mean fattening) meal of steak with blue cheese sauce, I desired something a bit sweet but light. So I headed up to the farmer’s market and picked up a nice basket of fresh-picked strawberries. And somewhat hesitantly I sliced them up and mixed them with the balsamic vinegar, sugar and freshly ground black pepper.
After an hour, I picked up a strawberry and popped it into my mouth, ready to spit it back out and complain about wasting good berries on such an illogical recipe. But I didn’t. It tasted okay. No, it tasted pretty darn good. Sweet and tangy. I put a small scoop of vanilla ice cream on top, and it became perfection.
It’s an easy weeknight dessert and would also be beautiful to serve to guests too. I know it shouldn’t work, but it does. 😀

Strawberries with Balsamic Vinegar
Slightly adapted from Barefoot Contessa
- 4 pints (8 cups) fresh strawberries, sliced thick
- 5 tablespoons balsamic vinegar
- 3 tablespoons sugar
- 1/4 teaspoon freshly ground black pepper
- vanilla ice cream, for serving
- Combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl.
- Set aside at room temperature for 30 to 60 minutes.
- Place a serving of the strawberries in a bowl with a scoop of ice cream on top
Use a good quality balsamic vinegar. It doesn’t need to be the most expensive one in the market but not the cheapest either.
