The other day I was looking through the recipe index and noticed that almost all my side dishes were either potatoes, rice or pasta. Really, I do eat vegetables. I just generally don’t do anything real fancy with them, so I made an effort to make a blog worthy vegetable dish this week.
Emeril and I watch Food Network when we’re going through his morning medicine routine, and the other day, we watched Paula Deen make some delicious looking creamed spinach. A few years ago, I wouldn’t have even given creamed spinach a second look until one of my friends took me out to a super nice steakhouse. Their creamed spinach forever changed my views on the dish.
It’s a rich and creamy side dish that takes a superfood and makes it bad. But oh so yummy! It feels like a real decadent side dish and pairs beautifully with almost any entree. I do love it with steak but will honestly eat it with almost anything. I also think it is one of the prettiest side dishes you can make too!
