I consider this to be one of my mom’s signature dishes. I think guests would riot if she didn’t serve this dish at our family gatherings. Seriously. It’s that good. Yup, I’m totally biased, but I know good food when I eat it, and this sweet corn is great food.
The majority of my immediate family spoons the sweet corn on top of their mashed potatoes instead of gravy. Now I’m not suggesting you do that, of course. It’s up to you to decide. Let’s face it: what rocks my world—might not rock your world. Trust me, I know from experience.
When I was a little girl, we used to go over to my grandparents every Friday for lunch. One day I noticed my grandpa had mixed everything with his mashed potatoes, including his butternut squash, which was the vegetable du jour that particular Friday. Well, being a little kid, it looked cool (orange potatoes!), so I copied him and discovered that it tasted bad. Real bad. Like gag me with a spoon bad. Thankfully, I managed to survive that self-made concoction and hold no grudges against my grandpa, mashed potatoes (as if!) or butternut squash.
Since then I’ve been a bit more cautious about mixing food together, but I’ll admit—this sweet corn tastes pretty darn good with my deluxe mashed potatoes. I love how easy this dish is. When you’re already cooking a big meal, the last thing you want to make is another complicated dish. This takes minutes and is sooooooooooo good.
