Yeah, I know. Another cranberry recipe? Really? Yup, I just can’t help myself. I love those little buggers. I’ll be honest–I’ve been hoarding cranberry recipes for the past year. Now that I can find them at the grocery store, I’ve gone a little out of control. I promise (maybe) that is my last cranberry recipe. Well, for this week at least.
Pumpkin pie is certainly the traditional Thanksgiving dessert, but it’s not my personal favorite. I don’t dislike it, but I don’t love it either. So I went in search of something slightly nontraditional, yet still perfect to serve at Thanksgiving or frankly, anytime of the year and found it at A Farmgirl’s Dabbles.
By itself, the cake is good, but it morphs into something spectacular after you drench it in a simple butter sauce. Interestingly, the first piece I ate was good but the next day – even better. So feel free to make this the day before serving, which is always nice. And please, please, don’t skimp on the butter sauce. Honestly, it ties it all together and knocks it out of the ball park.
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups whole fresh cranberries
- 1 cup milk
- 3 Tablespoons butter, melted
- 1 teaspoon vanilla
- 2 Tablespoons sour cream
- 1/2 cup butter
- 1 cup sugar
- 3/4 cup heavy cream
Instructions
- Preheat oven to 350°. Lightly spray an 8 inch square pan and set aside.
- Sift together the flour, sugar, baking powder and salt.
- Add cranberries, milk, vanilla, sour cream and melted butter and mix well.
- Pour into prepared pan and bake for about 45 minutes, until the top is golden and an inserted toothpick comes out clean.
- For the sauce: melt the butter in a small sauce pan over medium heat. Add sugar and cream and bring to a boil, cook for 1 minute.
- Serve warm butter cream sauce over slices of cake.

This looks really good. Even though i am not a huge cranberry person, but i think the sweet, rich butter cream sauce with the tart cranberries would rock. This would be a great Christmas desert. 🙂
