I like eggs. I like them fried. I like them boiled. I like them scrambled. I like them poached. I just like eggs. Period. One of my favorite ways to enjoy eggs is deviled eggs. They make me happy.
Every time I make these, I think of my nephew, Andy. He loves deviled eggs (although these days he also really loves bacon and shrimp too. What can I say? The kid has good taste. Just like his Auntie). These whip up quickly, and the hint of garlic makes them extra special.
I mash the yolks with a fork then spoon the filling back into the egg halves. My mom uses a mixer to make the filling silky smooth, which definitely looks nice. The truly ambitious can pipe the filling back into the egg halves too. Me? I like mine rustic, which is code for being lazy. 😀
Ingredients
- 6 hard-boiled eggs
- 1/3 cup mayo
- 1/2 teaspoon mustard
- 1 Tablespoon onion, finely minced
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Paprika to sprinkle on top
Instructions
- Peel eggs and slice in half. Scoop out yolks.
- In a medium bowl, mix yolks with mayo, mustard, onion, garlic powder. If you want it extra creamy, use a mixer, otherwise a fork works fine too. Salt and pepper to taste
- Spoon or pipe mixture back into egg halves.
- Garnish with a sprinkle of paprika. I also like to use chili powder as a substitute. Or chives work beautifully too.
- Serve immediately or refrigerate until serving. It’s best if they can sit for a couple hours before serving.
