My birthday is fast approaching, and I tend to get a bit reflective when it’s time to add another year to my life. Don’t get me wrong—happy to add another year! The alternative is definitely not a better option. But it does make me wonder where the time goes.
Summer is meant for kids. You are free of school and homework and can do what you want (within reason, of course!) I have vague memories of adults telling me to enjoy being a kid but I didn’t give them enough credit.
They were right.
It’s not like being a grown-up doesn’t have its perks; it definitely does. But we still have obligations to keep and cannot spend our days soaking up the sun.
Or cracking the shell of hard chocolate covering the creamy ice cream hidden underneath.
Admit it. You were wondering when I was going to get the magic shell chocolate topping.
When I saw this recipe, it brought back memories of my childhood. Afternoons spent swimming at the pool. Going to the library and checking out as many books as my little arms could hold. Going to the County Fair with my grandparents, brother and cousins and crying on every ride, including the Merry-Go-Round.
Yup, I was a wimp.
But I was strong enough to break a chocolate shell into pieces and gobble it up.

The good news is you don’t even need to be as clever as me (thank goodness) to make this two-ingredient topping. Nope. This might be the easiest recipe EVER. It is also really good, which makes it very DANGEROUS.

Magic Shell Chocolate Topping
- 1 cup semi-sweet chocolate chips
- 1 Tablespoon canola oil
- In a small microwaveable bowl, add the semi-sweet chocolate chips. Microwave for 30 seconds. Stir. Microwave for another 30 seconds.
- Add canola oil and stir until smooth and glossy.
- Spoon over ice cream and let it set for a minute or two until hard.
Store extra topping in a microwaveable container as it will harden in the fridge, and you will need to be the Incredible Hulk to remove it. Assuming you aren’t him, nuke the container for 30 seconds and stir until it’s nice and smooth again.
