One of the great things about being a food blogger is you are always trying new dishes so you never get in a food rut. On the flip side, you also rarely eat the same twice. So I thought today, I would share some of my favorite recipes—the ones I do make again and again.
Buttermilk Pancakes
So light and fluffy and absolutely delicious. I cannot sing the praises of these pancakes enough. They are da bomb diggity!
At least once I month, I make these. I used to enjoy going out for breakfast on the weekends but now I stay home and make buttermilk pancakes instead. They also freeze very well.
Caramels
I love chocolate but I love caramels just a tiny bit more. And these caramels, Wow! Chewy, rich and addictive. Trust me—you can’t eat just one!
Making caramels used to scare me, but they are not difficult to make. Now I make these every year for Christmas and they are always a huge hit. They make a ton, which is also nice.
Rhubarb Dream Dessert
My mom has a few rhubarb plants so we always enjoyed plenty of rhubarb desserts. This one is my favorite.
Every Spring when I can finally find rhubarb at the grocery store, I immediately whip up this rhubarb dessert. I love it. The yummy shortbread crust. The sweet and sour rhubarb. Add a scoop of vanilla ice cream and this is heaven on a plate.
Spaghetti and Meatballs
Growing up, I made a lot of our family meals. One of my favorites in spaghetti. Back then, I didn’t do anything fancy. Just browned some hamburger and heated a jar of spaghetti sauce. Now days, I’m a bit fancier.
While I generally not a fan of hamburger, I happen to adore these meatballs. Roasted garlic and parmesan cheese help make them super flavorful and tender. Both the spaghetti sauce and meatballs freeze very well too.
Deluxe Mashed Potatoes
Mashed potatoes might be my all-time favorite food. As long as I can remember, I have been a mashed potato fiend. Every holiday, both of my Grandmas would tell me they made plenty of mashed potatoes because they knew how much I loved them. And how much I could eat!
When some people crave comfort food, they want ice cream or chocolate. Not me. I want a big ‘ol bowl of these creamy, rich mashed potatoes. These are no ordinary spuds. I dress them up with cream cheese, sour cream and plenty of butter. So, so good!
