I find myself going through Breaking Bad withdrawal where I compare every show to it and find them lacking. Perhaps this is why I feel so underwhelmed by the new crop of shows unleashed this season. Or maybe they really are that bad. It’s probably a combination of both. But do you what makes a good combination? Corn and bacon.
In all fairness, bacon might make everything better. In fact, if all the shows incorporated bacon in some manner, they might dramatically improve. Okay, that’s probably not true. But still, it couldn’t hurt! Right? 🙂
I happen to adore sour cream, so the sharp taste it lends to the dish was a welcome one in my book. However, if you are not a fan of sour cream, you may want to pass on this recipe. In other words—Mom, don’t make this dish instead of your normal creamy sweet corn for guests. I know everyone loves that dish and this one won’t be univerally loved.
I did, however, enjoy it immensenly. If you’re like me and enjoy your baked potato with a 50/50 ratio of sour cream to potato, then you’ll like this dish too! It comes together quickly and has bacon, so really—what more do you want?
Ingredients
- 6 slices bacon, chopped
- 1/2 onion, chopped
- 2 Tablespoons flour
- 2 garlic cloves, minced
- Salt and pepper to taste
- 8 oz sour cream
- 3 1/2 cups corn (fresh or frozen)
Instructions
- Preheat the oven to 375F. Lightly spray a 1 quart baking dish with non-stick spray and set aside.
- Cook bacon until crisp then drain on a paper towel lined plate.
- To the bacon drippings, add the onion and cook until softened. Mix in the flour, garlic, salt and pepper and cook for another 1-2 minutes.
- Remove from heat and stir in the sour cream, then add the corn and half of the chopped bacon and mix everything together.
- Pour corn mixture into prepared baking dish and top with the remaining bacon. Bake for 20-25 minutes, or until heated through.

Bacon is just universally loved, unless you are a pig or vegetarian, I guess! 🙂 I bet your son with love this too. Smoky, salty bacon goes so good with the corn.
This looks delicious, but I’d have to try it without the garlic, which I’m afraid I can’t stand! Love corn and bacon, though 🙂
I have to confess that I am a huge garlic fan, but I definitely don’t think the recipe will suffer any affect without garlic. Let me know how you like it.
You are so right – bacon does make everything better! It might even make sour cream better, which is something I often avoid. My kids love corn and bacon, so I think they would love it! My one son loves bacon so much, he contemplated a bacon costume for Halloween!
I won’t lie – you can definitely taste the sour cream, which I know for some people will be an issue. Since I’m a sour cream fan – I loved it, but it might be too much for you, although your kids might love it! A bacon costume – I love it, but everybody would have waited a piece of him! 🙂

I only got to season 3 of Breaking Bad and lost interest…I know…I know.
That being said, I doubt I would lose interest in this recipe and thanks for taking the time to post it. It really does look delish!
