Valentine’s Day is next week, which I refuse to believe. I know it’s true, but February just started. How can it almost be half over? Well, MaxE and I have big, big plans for V-day.
Ummmm … we plan to laze around and do nothing. You’re jealous. I understand.
Honestly, last year I did not look forward to Valentine’s Day. I adopted my Beloved Emeril on a frigid February afternoon, and I could never remember the exact date, so we celebrated his birthday on February 14. Last year was my first Valentine’s Day without him in ten years.
It was hard.
I don’t expect it to be easy this year, but I know the most handsome cat in heaven is stuffing his face at the all-you-can-eat kibble buffet and chasing birdies. The frail, sickly cat is gone, and he is hearty, hale and full of sass again. And that is a good, good thing.
MaxE is pretty excited about V-Day because he’s hoping he will get a new laser mouse.
It’s a secret, so don’t tell him, but he will. 🙂
He will be less enthused about the Valentine’s Day scarf he will have to wear.
It’s not a secret, but Mama can’t wait to put it on him. 🙂
It’s also not a secret that I love these chocolate truffles. They are perfect for Valentine’s day or any special occasion where you want to WOW someone. They are easy to make, but you do have to allow a few hours because they need time to chill. The hardest part is waiting for them to set-up so you can devour one. Or two. Or three.
Ingredients
- 1/2 pound good bittersweet chocolate
- 1/2 pound good semisweet chocolate
- 1 cup heavy cream
- 1 tablespoon prepared coffee
- 1/2 teaspoon good vanilla extract
- Cocoa powder
Instructions
- Finely chop the chocolates and place in a heat-proof mixing bowl.
- Heat the cream in a small pan until it just boils. Turn off the heat and let the cream rest for 20 seconds.
- Slowly whisk the cream and chocolates together until the chocolate is melted and smooth.
- Stir in coffee and vanilla. Set aside at room temperature for 1 hour.
- Line a cookie sheet with parchment paper. Using a small melon baller or a teaspoon, scoop out teaspoon size balls of chocolate mixture onto prepared pan. Refrigerate for 30 minutes or until firm.
- Roll chocolate in your hands to form truffles. If your truffles are shaped nicely from when you scooped them, you can skip this step. Please note: this can get messy as your hands will warm the chocolate, and you may want to wear gloves.
- Roll truffles in cocoa powder. Store in the refrigerator but serve at room temperature.
Notes
I used 85% Lindt chocolate and Semi-Sweet Chocolate from Ghirardelli. I did put my truffles into the fridge for about 30-45 minutes before I scooping them as they were too soft, so use your best judgement.

Oh my is right! I think I am going to give these a shot at making for Valentines Day. I usually make chocolate covered strawberries, but I’ve done that one several times now, it is time to mix things up. Yum yum!
I’m a big fan of chocolate covered strawberries or dipping them into a big ‘ol pot of chocolate fondue. You can never go wrong with that! This would make a nice change. Still super decadent but pretty easy to make. Hope you enjoy them!

Not a chocolate cake fan, interesting. 🙂 I pretty much love all chocolate but I have a fairly low tolerance for rich food, which is probably a good thing! Max is not a fan of clothes. He definitely pouts and tries to pull his clothes off. Of course, I think it’s hilarious, which probably only makes him angrier. LOL!
