I remember feeling baffled last Friday when I realized that my vacation was almost over. It didn’t seem possible. Now I feel the same way this week. Where does the time go? It’s so sneaky. Sometimes it moves snail slow and other times lightning fast. It must be part feline since you have little control over it. Or maybe I just have no control over my feline. 🙂
The blog redesign is going well and assuming everything keeps moving as is, I should be able to unveil it on Monday. Fingers crossed! It’s amazing how much better things go when you’re not panicking and moving too fast. LOL!
This week I am sharing one of my new favorite potluck salads. Of course, you don’t have to take it to a potluck, but it’s always a hit if you do. I found this salad on Pinterest (the place of all things yummy and pretty), and we made at Christmas for one of our many celebrations. We loved it and my Mom has brought it to many dinners since then with great success.
The salad is super easy and very versatile. You can vary the fruit to suit your preferences and what’s in season. Between my Mom and myself, we have used strawberries, blueberries, pineapple, bananas, red grapes, peaches and mandarin oranges. Raspberries, blackberries and mangoes would also be delicious. Just pick your favorite combinations and match it with a complementary yogurt flavor and you are set.
I know we eat with our eyes first, and this salad is not exactly the most photogenic, even though it is delicious. Or maybe I’m a bad photographer. Or maybe it’s a bit of both. Regardless, this salad is a keeper and your guests will lick the bowl clean.
Ingredients
- 1 (3.4 ounce) instant cheesecake pudding
- 1 1/2 cups cool whip
- 2 8 oz containers of strawberry yogurt (or your choice)
- Approximately 3-4 cups of fruit (strawberries, bananas, pineapple, grapes, etc.)
Instructions
- In a large bowl, combine the cheesecake pudding mix, cool whip and yogurt together. Please note that you are adding the dry pudding powder to the other ingredients.
- Gently fold in your fruit and refrigerate for 30 minutes before serving.
Notes
This is a very versatile salad. You can change the yogurt flavor to match whatever fruit combinations you choose. Strawberries, blueberries, raspberries, blackberries, pineapple, mandarin oranges, mangoes, grapes, peaches and bananas would all work in this salad. Of course, not all at the same time! Choose 3-4 fruits to feature in your salad.

This looks SO yummy. I’ve been afraid to read the post ever since I got the title in my “inbox”, and now I know why!!! This could definitely be addicting. 🙂
It is really addicting, Laurie. I don’t know if that’s a good thing or a bad thing. 🙂 What even better (or worse) is the salad is SUPER easy to make. We’re big fans of it and I tell myself with all the fruit in it – it can’t be that bad for you. Right?!?!?!?!
