It has been really hot here the past few weeks. And I DON’T LIKE IT. It makes me cranky and sweaty and crave ice cream way too much! Normally, when it is baking outside, I definitely don’t feel like doing any baking inside. I do tend to crave lighter foods, which is the one and only good thing about this heat wave. But still, I can only eat so much lettuce before my belly grumbles for something with a little more sustenance. Since turning on the oven is not even an option, I turn to my trusty crockpot. I love that little guy.
Crockpots are the unsung heroes of the kitchen in my opinion. They aren’t sexy and seem a bit old-fashioned. You tuck them away and forget about them. I humbly request that you bring those bad boys out of storage and use them! Because we often associate beef stews, roast beef and more heartier fare with them, we also tend to only use them during the cold, winter months. Not me. I use mine year-round.
I love just tossing a handful of ingredients into one and returning 8-10 hours later to something delicious, even something hearty, like spicy roast beef. Oh man. This was so easy to make and so delicious. I usually brown meat before finishing them in a slow cooker, but not this time. I just threw it with a few ingredients and let the slow cooker work its magic. By the end of the cooking time, I was hovering nearby with a rumbling belly. It did not disappoint.
Tender. Succulent. Flavorful. And dare I say — Amazing. Now let’s talk about the spiciness of the roast. I am an admitted spice wimp, but this is not super hot and spicy. It did not lead to profuse sweating (TMI?) or big gulps of milk to cool my overheated mouth. It has just a touch of heat. Now I did use the mild giardiniera and imagine the hot version would increase the heat factor.
One thing I appreciate about roast beef is how versatile it is. I made roast beef sliders with cheesy ranch potatoes (amazing and recipe coming next week) for one meal, followed by roast beef and gravy over mashed potatoes and then made roast beef hash. It’s perfect for those with family members who are adverse to leftovers.
This is the ideal go-to meal when you’re crazy busy, it’s mega hot (or cold) outside and you want some good eats. I have made this several times, which is one of the highest recommendations a food blogger can make. We are always on the hunt for something new to share, but I keep coming back to this juicy roast beef.
