One things most food bloggers are notorious for is claiming every dish is “the best ever” and I try to say those three little words sparingly but … this mango and black bean quinoa salad is the best ever! Seriously and sincerely! I am so in love with this salad! Thank goodness it is not only easy to make but also good for you too, which are just two more reasons why it truly is the best salad ever.
I am typically not be a big fan of mangoes, but they are perfect in this salad. They add the right amount of sweet balance to the meatiness of the black beans and the tartness of the lime dressing. It is super filling and holds well over several days too, which is extra nice as I love eating leftovers.
As much as I enjoy cooking, it is a lot of work to cook 3 meals every day. Any dish that makes leftovers that taste just as good the next day gets a gold star in my book. I paired this with a grilled chicken breast to keep my meal ultra healthy.
Yup, Tanya is being really good food-wise, eating good-for-you salads and grilled chicken instead of gobs of mashed potatoes. We won’t acknowledge her new addiction to Hawaiian Punch, which she blames her parents for starting. They had punch when she was home for Christmas and she maybe (did) get hooked on its sweet, tangy nectar. Baby steps, people. Baby steps.
