Bacon Egg Salad with Avocado

Your classic egg salad sandwich with a little extra pizzazz. Bacon adds a satisfying crunch while slices of avocado add some velvety creaminess.
Servings: 4 sandwiches

Ingredients

  • 6 hardboiled eggs roughly chopped
  • 6 slices of bacon crumbled
  • 1 avocado pitted and sliced and lightly salted
  • 1 green onion sliced
  • 1/4 cup mayo
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon salt or to taste
  • Pepper to taste
  • 4 croissants

Instructions

  • In a medium bowl, combine mayo, lemon juice, green onion, salt and pepper together.
  • Add eggs and bacon and gently stir until combined.
  • Spread egg salad over croissant bottom, add a few slices of avocado, and croissant top. Serve immediately.

Notes

You could cube the avocado and mix directly in the egg salad mixture too. This would also be excellent with a thick tomato slice, but it’s hard to find juicy tomatoes right now, so I left it out.
