Peanut Butter Toffee Oyster Crackers
Oyster crackers are covered and baked in a peanut butter toffee sauce, turning them into a crunchy, sweet and savory snack. You won't be able to eat just a handful!
- 1 bag Oysters Crackers about 4 cups
- 1/2 cup dark brown sugar
- 1/2 cup butter
- 2 Tablespoons creamy peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon kosher salt
Preheat oven to 400F. Line a cookie sheet with aluminum foil, then lightly coat the foil with non-stick spray. Set aside.
In medium saucepan, bring butter and brown sugar to a boil over medium high heat. Boil for 3 minutes (the mixture will bubble and get fluffy). Remove from heat and stir in peanut butter, cinnamon, salt and vanilla extract.
Stir in oyster crackers and spread crackers over the prepared cookie sheet as evenly as possible. Don’t worry if you can’t spread it out in a single layer.
Bake 2 minutes. Remove from oven and stir crackers, now smoothing out into a single layer.
Bake for an additional 3 minutes. Remove from oven and cool for 5 minutes.
Stir, to break up the pieces if they have clumped together, and cool completely. Store in an airtight container.
These keep well and would make an excellent gift during the holidays.
