1/2 - 1cupsmoked gouda (or mozzarella or fontina)diced
1cupcherry tomatoescut in half
8 cupsarugula
Instructions
In a medium bowl, whisk together olive oil, lemon juice, salt and pepper, sugar and dried oregano. Add garbanzo beans, garlic and shallots. Stir and refrigerate for 2 hours or up to 24 hours.
When ready to serve, add the salami, tomatoes and cheese to the garbanzo mixture. Serve over arugula or your favorite lettuce mix.
