Bacon Ranch Tortilla Roll-Ups

An easy, make-ahead appetizer that will delight your family and guests. Filled with cream cheese, crispy bits of bacon, green chiles and plenty of cheese, these are addictive snacks everyone will enjoy.

Ingredients

  • 4 12- inch tortillas
  • 2 8- ounce packages cream cheese softened
  • 1 4 oz green chiles, drained
  • 1/2 cup green onions finely chopped
  • 1/3 to 1/2 cup bacon cooked and finely chopped (4-6 slices)
  • 3 Tablespoons ranch dressing mix
  • 1 cup finely shredded cheddar cheese*

Instructions

  • In a large bowl, combine everything minus the tortillas. Spread cream cheese mixture over each tortilla in an even layer. Tightly roll up each tortilla and wrap in plastic wrap. Refrigerate for for several hours or overnight.
  • Unwrap and slice roll-up into 8-10 pieces when ready to serve.

Notes

*I like using a cheddar cheese mixture but use whatever kind of cheese you like - monterrey jack or pepper jack, if you like it spicy, would also work well.
You could use fire-roasted green chilies or finely minced fresh jalapeno or finely minced green or red pepper in place of the regular green chilies.
