Mediterranean Orzo Salad

Servings: 6

Ingredients

  • 6 oz orzo
  • 1 1/2 cups grape or cherry tomatoes halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup italian parsley chopped
  • 1/4 cup red onion finely chopped
  • 1/2 cup lemon juice
  • 1 tsp honey
  • 1 clove garlic finely chopped
  • 1/2 cup extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Cook orzo according to box directions until al dente, then drain and set aside.
  • In a bowl, add lemon juice, honey, garlic, salt and pepper and slowly whisk in olive oil.
  • In a large bowl, combine tomatoes, feta cheese, Kalamata olives, parsley, red onion and pasta. Add enough dressing to coat, then toss to combine.
  • Serve warm or at room temperature.
