Apple Kale Salad with Chicken

Servings: 4

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 clove garlic
  • 1 1/2 tbsp dijon mustard
  • 1/4 tsp salt
  • pepper to taste
  • 1 bunch kale
  • 2 apples cored and cut into big chunks
  • 1/2 cup dried cranberries
  • 1/4 cup almond slivers
  • 3 oz goat cheese crumbled
  • 1 lb cooked chicken cubed into large chunks

Instructions

  • Remove kale leaves from the stems and cut into thin slices. Rinse well under cool water and let drain while you make the dressing.
  • In a blender, add olive oil, apple cider vinegar, dijon mustard, garlic, salt and pepper. Blend until the dressing is smooth.
  • Combine kale, chicken, apples, almonds, cranberries and goat cheese in a large bowl. Pour dressing over salad and toss to coat.

Notes

This is a perfect salad to use leftover chicken or a rotisserie chicken. Or you can eliminate the chicken and serve as a side salad too.
