Remove kale leaves from the stems and cut into thin slices. Rinse well under cool water and let drain while you make the dressing.
In a blender, add olive oil, apple cider vinegar, dijon mustard, garlic, salt and pepper. Blend until the dressing is smooth.
Combine kale, chicken, apples, almonds, cranberries and goat cheese in a large bowl. Pour dressing over salad and toss to coat.
