Buttermilk Oat Pancakes

Servings: 8 Pancakes

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 1/4 cup buttermilk
  • 1 egg
  • 1/4 cup white or whole wheat flour
  • 1 tbsp honey
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 1 tbsp butter melted

Instructions

  • Combine oats and buttermilk in a bowl. Cover and refrigerate overnight.
  • Add egg, flour, honey, baking powder, baking soda, cinnamon, salt and butter oats mixture. Mix well.
  • Coat griddle with non-stick spray or butter over medium heat. Pour a scant 1/4 cup batter and brown; approximately 1-2 minutes on each side. Repeat with remaining batter.
  • Serve with maple syrup. Also excellent topped with sliced bananas or blueberries!
